Hello there! Samsmum calling!
The cookbooks were a great success with my friends, students and relatives, and I have had some very good reports about the recipes. I have made several myself and they have all turned out well.
Come on folks, tell us which you have made and how they came out.
I have concocted a new recipe which wasn't in time for the cookbook. Perhaps you would like to try it.
SAVOURY BREAD AND BUTTER PUDDING.
Grease a pudding dish, (I use an oblong one about 2" deep), butter the bread lightly, cut into triangles and line the dish.
Sprinkle in grated cheese, (over the bread and butter so that it sticks well), and finely chopped spring onions, or ordinary ones if you prefer. A sprinkle of salt and pepper to taste.
Cover with another layer of buttered bread triangles, and cover them well with cheese, onion and salt and pepper.
Put a final layer of buttered bread triangles over the top.
Beat 3 eggs and about 3 tablespoonsful of milk till very smooth, and pour over the bread and butter. Press down lightly so that the liquid soaks into the bread, and then sprinkle the top with cheese.
Bake at 180oC for about 35 minutes, or until golden brown on top, and a knife inserted comes out clean.
Serve right away with some cherry tomatoes, or salad or whatever takes your fancy.
It is almost like a souffle, and a great favourite with David for a light lunch.
